FABBY: Bundt Cake Challenge


Hello sweet friends!

We just came back last night from a week with the 'adorable grandgirls,' because their parents were going away on a business trip to Colombia...and you know, we ran immediately saying...aye,aye.sir!

We had fun even though we had to wake up at 6am to get ready for school and I had to bath them each night and dry those long gorgeous hairs they got.
Although Victoria, the eldest, baths and dresses on her own in the morning, but not the 7 yr. old; she does not even open her eyes, lol!

Than I comb their hairs, than it's breakfast time, lunch boxes, phew, phew! Than pops takes them to school.

When they come back at almost 3pm is lunch time and so on and on and on...we love them so much, that all is worth it; because they grow sooo fast!

I adore Bundt cake tins in different shapes and specially the Nordic-Ware ones. 

Therefore, my new acquisition when visiting the girls, is a C'mas Star Bundt tin, and here you have it, all baked into a 'Swirl Marble-Cherry Cake.'
The recipe is at the end of this post, for the ones that want it.

Here is my Star Bundt cake I baked with my new addition to my 'Bundt tin family,' lol! 
I have many between Wilton and Nordic Ware, which is this one and I like the Nordic ones better, they come in fabulous shapes, you want them all, hehehe..

The cake is a 'Swirl Marble-Cherry Cake' that I've made for years and it's wonderful and always comes out perfect...and I'm loving my C'mas star pan!





The Swirl Marble-Cherry Cake's recipe is at the end of this post, if you wish...and it won't last long around, I promise!

I also love tool boxes, as I got this one a few months ago in the 'Folklore Fair' market here...just in time for Fall 2014.


This is what the 'Christmas Star Bundt tin' from 'Nordic Ware' looks like and it's a 10-inch too.

"SWIRL MARBLE-CHERRY CAKE"

2 cups sugar
1 cup butter, softened
3 1/2 cake flour
1 cup milk
1 1/2 teaspoon, double acting baking powder
2 teaspoons vanilla
1/4 teaspoon salt
4 eggs
1/4 cup cocoa
1/2 cup dry cherries

Grease a 10inch tube pan; set aside.
In large bowl with mixer at low speed, beat sugar and butter until blended.
Increase to high and beat until light and fluffy. Add flour and remaining ingredients except cocoa and dry cherries.
Beat until it's mixed well and scraping bowl with rubber spatula. Increase speed and beat batter 4 minutes longer. Then add the dry cherries by hand.

Preheat oven to 350F.
Remove about 2 1/2 cups of batter aside and beat well with a wire whisk the 1/4 cup cocoa in a small bowl.
Alternately spoon vanilla and chocolate batters into prepared pan. With large spoon, cut and twist through batters to obtain marble effect. (I use a fork better)

Bake 1 hour, or until pick comes out clean. Mine bakes exactly in 1 hour!
Cool cake in pan for 10 minutes, than take it out to your fave cake platter.

I drizzle it with a lemon juice and powder sugar mixture, but it's optional.
You can just dust it with powder sugar and it'll be perfect too.
